Way before we had the convenience of fast food, the pleasure of fine dining and the entertainment of hibachis, there were only saloons, general stores and cowboys making do with whatever they had in the wild, wild west. Cowboys and ranch hands would end their long days with chuck wagon cooking and conversation around the campfire. And their style of cooking is still available today, kind of, at the restaurant Cowboy Chow.

Jason Boso, the mastermind behind Deep Ellum’s Twisted Root Burger Co., wanted to bring the “open range” concept to the Dallas dining scene with Cowboy Chow. The restaurant first debuted in the summer of 2008 also in Deep Ellum and has been turning patrons into cattlemen and bronco-busters ever since with their unique cuisine. The rustic menu offers everything from cast iron chicken pot pie to 21 day-aged cowboy ribeye.

For today’s Appetite for Instruction, Jason Boso will be demonstrating his cowboy twist on food layering with the Mashed Tater Parfait – brisket, mashed potatoes, cowboy caviar, sharp cheddar and tortilla strips garnish.

Brisket Seasoning:
¼ cup seasoned salt
¼ cup white pepper
¼ garlic powder
¼ cup black pepper
½ tbsp paprika
½ tbsp onion powder

Lone Star Beef Brisket:
½ cup olive oil
brisket seasoning
1 5-7 lb beef brisket, trimmed and cut into large chunks
1 cup yellow onions, sliced
1 Lone Star Beer
8 cups beef stock

Cowboy Caviar:
Vegetable medley with corn
Black Beans
Chopped Red Onion

Cowboy Chow Tater Parfait Step 1

Step 1: Preheat oven to 400 degrees. Heat the oil in a large braising pan on medium high heat. Sprinkle the brisket liberally with brisket seasoning. Pan sear on all sides.

Step 2: Add onions, beer and beef stock to the pan. Cover and move to a preheated oven. Braise for 5-7 hours until tender. Remove liquid and shred the brisket.

Step 3: Use the last hour of the brisket braising in the oven to make your mashed potatoes and cowboy caviar. For the cowboy caviar, combine the vegetable medley with black and chopped red onions and heat up in a skillet.

Step 4: Now it’s time for the layering process! Add a layer of brisket and your favorite mashed potatoes to a jar or bowl. Then add the cowboy caviar and garnish with the cheddar cheese and tortilla strips. Kick off your boots and chow down on some cowboy cuisine.
