Celebrated pastry chef Tracy Dempsey has officially announced that she will be leaving her position overseeing desserts for Cowboy Ciao, Digestif, and Kazimierz, a position she’s held for the last five years, on June 8th.

Dempsey is working on opening Galette Dessert Bar, where she will serve desserts, dessert-inspired cocktails, sandwiches, salads, and savory items. The location will likely be in Scottsdale, but she’s keeping her options open.

It’s a really big project for which she needs time to focus her attention on this. It’s too hard to oversee three restaurants and a crew and try to start a new venture.
